Who says a grilled cheese has to be the old standard developed from yesteryear? Let's get adventurous, maybe even a little bit wild in some people's opinion, and explore a new world. In this recipe, I will teach you my method of making the perfect grilled cheese but take it to the next level by creating a #JellyCheese sandwich! So jump on my magic carpet and let me open your eyes to a whole new world my friend!

WAKE UP AND SMELL THE BUTTER!
As simple as a grilled cheese recipe sounds, its pretty easy to mess things up. The order in which you do things will make the difference in your #sando. So, let's crank that griddle (or stove) and get your surface hot-hot-hot! STEP 1: COOK IT BUILD IT
Crank your stove heat or in my case griddle and get the surface super hot. While this is going, grab two slices of your favorite bread. I personally love Italian white bread. To me it has a sweeter taste and balances nicely with the crispy buttery outside, cheese and jelly spread.
Once the surface is hot, take the two pads of butter and drop them in the pan
Take your butter knife and slide them around like a hockey puck coating the pan surface with butter everywhere. Once you see it fully melt, grab your slices of bread
Once you smell that beautiful smell of frying butter, take both pieces of bread open face and place them on the frying butter sliding them around the pan to soak up as much as possible. Turn your burner heat or griddle down at this stage. We're going low and slow for the remainder of the time.
Take the cheese and place both slices on one of the open face pieces
Your cheese should start to melt quickly. Watch carefully so your heat isn't too high because you don't want to burn the bread.
Check the empty slice of bread it should be close to golden brown. When it is crisping up, take it off the pan, let it cool for a couple minutes and quickly layer on your desired jelly then place back in the pan.
Once the jellied bread is back in the pan, flip your cheese side over the jelly. and give it another 30seconds to a minute for the jellied side to toast up. The cheese should start to incase the jelly at this time too.
Pull of the pan, slice your sandwich on a diagonal, and you have yourself a jelly cheese.
