BIG MAC SMASH CHAFFLE

Falling into the same old routine and looking to spice things up a bit on a weekend? Lucky for you I have your back on this one! After talking Keto Sandwiches on the podcast, I was determined to make this epic sandwich a reality. This, my friend, is not any Mac-Shack look-alike burger. This is my take on a keto friendly burger with the crunch and quality of an epic #SmashBurger. Dude... you're drooling—here's a napkin.

SANDWICH BUILDING MATERIALS LIST

Secret Pickles

  • 2x cucumbers sliced to your preferred pickle thickness

  • 3 cups vinegar

  • 1 cup water

  • 1/2 cup sugar

  • 1/3 cup salt

  • 1/3 cup pepper corns

  • 1/3 cup lemon juice

  • 1tablespoon minced garlic

  • 3 tablespoons roasted garlic powder

MAC-SWACE

  • 2 teaspoons Dukes mayo

  • 1 teaspoon ketchup

  • 1 teaspoon dill pickle relish

  • A splash of vinegar to taste

Chaffle Buns

  • 1 Egg

  • 1 tablespoon almond flour

  • 1/2 cup shredded mozzarella cheese

  • 1 tablespoon grated parmesan cheese

  • 1/8 teaspoon Italian seasoning

  • 1/8 teaspoon garlic powder

Burger Patties

  • Canola or vegetable oil for the pan

  • Ground meat ratio of 15% Sirloin and 85% Chuck. Personally, I like to use (15%) chuck roast and (85%) brisket.

  • Your favorite blend of seasonings for burgers. Personally, I love #FamousDaves Rib Rub

Toppings

  • White Onion

  • Shredded Lettuce

  • Tomato (Not pictured but could be a nice addition)

  • American or Colby Jack Cheese

Suggested Equipment

  • Decent size flat iron pan or surface for cooking the burger patties.

  • Meat grinder OR if you don't have one, ask your grocery store butcher if they can grind your meat selection for you. Most of them kindly will do this for you.

  • Large #espatula, or flat surface for smashing your burger.

  • Mason Jar(s) for fermenting your pickles.

  • Mini Waffle Maker OR if you don't have one you can buy frozen keto #Eggos.

  • Squeeze bottle or container to save your MAC-SWACE.

LET'S GET IT ON!


First, turn to your #Alexa, #Seri or AM/FM radio and promptly crank the tunes. This recipe is a commitment and just downright fun. For me, I am going to crank Thunderstruck by AC/DC to eleven.... The lyrics to this song by #ACDC pretty much describe how you are going to feel once you take your first bite. Let's goooo!


STEP 1: MAKE THE PICKLES & MAC-SWACE

1-2 Days prior to feasting day make your pickles to allow fermentation to take effect. Shout out to my friend Joe Gatto for this recipe... If you want to see how we made them on our show you can check it out here. For the pickles:

  • Take your 2 cucs and slice them up anyway you would like. I personally like pickle chips so mine are a quick slice. Once you have them all sliced up place them in mason jars or one mason jar if you have a big one.

  • Grab a pot or pan and put the remainder of the ingredients in there and bring to a boil stirring randomly so nothing burns on the bottom of your pot. Your house now should smell like a pickle factory!

  • Once you see the very beginning of a boil, turn off the burner and let it rest.

  • CAREFULLY.... Pour the mixture into your jars and close the lid, and place in the fridge for 48+.

For the MAC-SWACE:

  • Take the ingredients and whisk them together in a bowl. Set in the fridge until topping time.


STEP 2: MAKE THE BUNS

If you are making your own from scratch, I suggest making these first before cooking the meat so the chaffle buns can cool down for your eating pleasure. Otherwise, if you pick these up at the store you can heat them up at this time too. Here's what you need to do to make your own:

  • Heat up your mini waffle maker.

  • Mix together all the ingredients until blended well.

  • Once waffle maker is hot, spray with non-stick spray then sprinkle the bottom of the griddle with a little bit of mozzarella cheese then quickly pour your batter on top and right before you close the top, sprinkle just a little more mozzarella cheese on top of the batter.

  • Close it up, then wait 3-5 min and take a look. You want it to be golden brown before pulling them off. Rinse and repeat to make the remainder of your buns. Let them all cool down so they get nice and crunchy.


STEP 3: MAKE THE BURGERS

If you have never made a smash burger before, I highly recommend you watching this tutorial preformed for us by Chef Joe Gatto. There is a science to making the perfect smash burger and this part is key! If you are grinding your own meat, make sure to par freeze your chunks and grinder before doing the grind. Click here to watch Joe's tutorial on how to do that step.


Cooking your patties:

  • Once you have formed your desired size patty, I would recommend the size of a racket ball, grab your iron pan, griddle you name it just make sure it is iron because you need this surface to get H-O-T!!!

  • Crank the heat and start slicing up your tomatoes and onion. Yes, don't do anything to the pan just get it hot as heck!

  • After a few minutes, go back to your hot iron and drizzle a little Canola oil on there just to coat it a little. Wait for little whisps of smoke, then you are ready to go.

  • Take your balls of meat one at a time and place them strategically in your pan. With your spatula, carefully press down and flatten the crud out of the meat so it is super flat. Surface area is your friend!!! Depending on how much your balls spread, you may need to wait for the next round to cook all the burgers. Now, my friend, you have a smash burger! Whatever you do, leave them in place don't move them around.

  • Once your edges start to brown, flip your burger to the other side and take your seasoning blend of choice and gracefully sprinkle it over the top. I personally love #FamousDaves rib rub but to each their own.

  • Once you start to see juices rize to the top of the meat (1-2 min later), you should be in business and it is time to pull these babies off!

  • Throw your cheese on top of the meat and let everything rest and meld.


STEP 4: SANDWICH ASSEMBLY

Ok enough talk, let's knock this bad boy out. You know what to do... In case you want to replicate the photo, here are my layers:

  • Chaffle Bun

  • Shredded Lettuce

  • White Onion

  • Secret Pickles

  • MAC-SWACE

  • Colby Jack Cheese

  • Smash Burger

  • Smash Burger

  • Chaffle Bun
